Cranberry Beans and Kale

A simple pot of beans starring healthy organic kale enhanced with aromatic organic vegetables and herbs to make a rich broth; my Cranberry Beans and Kale can be enjoyed as a vegetarian main by itself with a sprinkling of parmesan, over a short pasta such as ditalini or with rice! If you want to enhance the protein in my Cranberry Beans and Kale, just add some organic Italian sausage! No matter which way you serve this nutritious dish, you are sure to enjoy the rich flavor and health benefits of a simple pot of beans!

1 pound dried cranberry beans(Rancho Gordo is good)

Water, enough to cover the beans by 2+ inches

1 organic onion, peeled and chopped

2-3 organic garlic cloves, peeled and sliced

1 organic carrot, scrubbed and chopped

1 cup chopped organic celery

2 tablespoons hot pepper garlic sauce(DeLallo is good)

3 tablespoons extra virgin olive oil

3 bay leaves

1 tablespoons dried oregano

1 teaspoon dried basil

1 teaspoon ground pepper

1 bunch organic lacinto or dino kale, chopped(include the stems)

1 organic tomato, chopped

1 tablespoon himalayan salt 

Grated parmesan for serving(optional)

In a large stockpot, add all ingredients except the tomato and salt

Bring to a full boil for 10 minutes

Lower to simmer and cook for another hour

Stir in the tomato and salt and cook for another 30-40 minutes until beans are tender 

Remove from heat, let rest for flavors to meld

Serve with a short organic pasta, rice or by itself! Enjoy
