Chunky Vegetable Chicken PozoleThis is a real simple way to prepare delicious Pozole made with prepared broths, savory spices, tomatillos and lots of organic vegetables and chicken. The star of my Chunky Vegetable Chicken Pozole is fiber rich hominy that can be prepared ahead of time or you can simply use a good canned variety that has been rinsed. My Chunky Vegetable Chicken Pozole is a real crowd pleaser and essential for the upcoming holidays or anytime you want to serve a vegetable forward, fiber rich Mexican soup that is filled with flavor and nutrition!

1/4 cup extra virgin olive oil

2-3 free range boneless, skinless chicken breasts, cut into strips

2 organic leeks, sliced into rounds

1 organic onion, peeled and cut up

6 cloves organic garlic, peeled and sliced

7 organic tomatillos, peeled and quartered

1 organic red bell pepper, sliced in rounds

1 organic jalapeño pepper, chopped

2 tablespoons dried Mexican oregano

1 tablespoon dried coriander powder

2 teaspoons dried cumin powder

2 whole bay leaves

2 teaspoons Himalayan salt

1 teaspoon ground pepper

2 dried chili d’arbol, crumbled

32 oz of prepared chicken stock

2-3 ripe organic tomatoes, quartered 

2-3 organic squash like patty pan, yellow or zucchini, cut up in large pieces

1 bunch organic collard greens or similar, roughly chopped

32 oz prepared chicken broth

2-3 cups boiling water

2-3 cups cooked hominy, Ranch Gordo is good or if canned, drain and rinse

1 tablespoon organic lime juice

For garnish use roughly chopped organic cilantro and lime seasoned shredded cabbage, radish slices or avocado

Heat the oil to medium high in a large stock pot

Add the chicken and next 13 ingredients, stir and cook until chicken is cooked through and vegetables softened

Add the chicken stock then the  tomatoes, squash and collards

Reduce temperature to simmer

Stir in the chicken broth and extend with boiling water

Add the hominy and lime juice

Simmer the pozole for 25 minutes

Serve pozole with lime seasoned shredded cabbage, avocado slices, radish slices and corn chips! Enjoy this delicious soup!
