This salad is particularly impressive at a holiday meal! The key to it’s appeal is the layering process, with each new layer another dimension of the salad is created!
Arrange the salad in a large shallow serving platter; do not use a deep bowl!
Start with roughly chopped crisp romaine lettuce, then a layer of sturdy greens such as baby kale, baby spinach and baby chard.
Next a little roughly chopped radicchio
Then shredded carrots
Next chopped celery
Then sliced cucumbers
Next thinly sliced red or orange bell pepper and thinly sliced red onion
Then cauliflower florets
Do not mix the salad; just keep layering with another raw organic(if possible) vegetable
Top with drained marinated artichoke hearts, avocado slices and quartered hard boiled eggs and grape tomatoes
Finish with festive shelled pistachios, pomegranate seeds, whole cashews and a
sprinkling of chopped fennel fronds!
Each layer adds another dimension to this yummy salad!
