1/4 cup extra virgin olive oil
1 organic cabbage, shredded
1 organic onion, peeled and chopped
2 organic carrots, scrubbed and cut up
3 organic Roma tomatoes, chopped
2-3 tablespoons organic celery leaves
1/2 teaspoon dried organic thyme
1/2 teaspoon caraway seeds
1 teaspoon himalayan salt
1 teaspoon veggie pepper, Frontier
1 32 ounce container unsalted chicken or vegetable broth
2 cups water
30 small free range frozen swedish meatballs, Wild Fork
In a stockpot heat olive oil to medium high
Add the cabbage, carrots and onions and sauté until vegetables soften
Stir in the seasonings and chopped tomatoes
Add the broth and water and reduce to simmer
Add in the meatballs and simmer the soup for 50 minutes
That’s it! Serve in deep soup bowls. Enjoy!
