Broccoli Cauliflower Soup with Ditalini.
This is an old Italian recipe for a winter soup that is both cleansing and healing! My Broccoli Cauliflower Soup with Ditalini is a perfect soup with which to start the New Year! It is brimming with organic cruciferous vegetables, aromatics, organic carrots, tomatoes and greens, with organic ditalini pasta for body. It is so simple to make, so quick and easy that you will ant to make it often. My Broccoli Cauliflower Soup with Ditalini is typically made in the winter and into spring; but I find it a perfect nutritious and healthy vegetarian soup to be made year round. Enjoy!
1/4 extra virgin olive oil
1 large organic onion, peeled and chopped
2-3 organic garlic cloves, peeled and sliced
1/2 bunch organic broccoli, trimmed and cut up(use the stalks as well)
1/2 head organic cauliflower, cut up
1-2 organic carrots, rubbed and cut up
1 large organic tomato, cut up
1/2 bunch collards, kale or swiss chard, cut up
4-5 cups water
32 ounce ready made unsalted broth (optional as water is just fine)
1 tablespoon dried celery leaves
Himalayan salt and veggie pepper to taste
8 ounces organic ditalini, cooked just under al dente
In a large stockpot, heat the oil to medium high
Add the onions and garlic, sauté for a few minutes
Add all the remaining vegetables and sauté
Add water to cover the vegetables by 2-3 inches
Add celery leaves
Add broth if using
Season with salt and pepper
Bring the pot to a boil then remove it from the heat
Stir in the pasta and correct the seasoning and liquid if necessary
