Black Rice Salad with Curried Roasted Vegetables
I use the left over Curried Roasted Vegetables and combine them with exotic black rice
to make my Black Rice Salad with Curried Roasted Vegetables! My Black Rice Salad
with Curried Roasted Vegetables is just really a salad to use left overs but it really is
sensational! The Vindaloo seasoning from Frontier is a superb curry seasoning that
brings all the ingredients together!
So just take whatever rice you have leftover; I use the black rice from Lotus.
Now add the left over Curried Roasted Vegetables from the night before to the rice in a
large mixing bowl.
Add more Vindaloo Curry seasoning, add a chopped organic cucumber, a chopped
organic tomato, a dash of Banana vinegar and a dash of olive oil.
Season with Himalayan salt and ground pepper and a dash of Aleppo pepper.
Stir it up and transfer to a serving dish. Just yummy on its own or as a side dish to
chicken or pork!!
