Beet Green and Radish Top Pesto
Our local CSA, Seeds and Spores Family Farm is growing fabulous organic beet greens and wonderful radishes this time of year! So I concocted a pesto,my “beet green and radish top pesto” with these beet greens and radish tops that is just off the charts in flavor and nutrition! Really good Parmesan cheese, extra virgin olive oil, organic garlic, organic lemon juice, raw almonds and a sauce made from Calabrian peppers and garlic make my beet green and radish top pesto a must make and a must keep for a quick healthy supper served over angel hair, rice, ravioli, gnocchi; the versions are endless!
1 bunch organic beet greens
2 bunches organic radish greens
4 cloves organic garlic, sliced
1/2 cup Parmesan Reggiano or the like
1/2 cup extra virgin olive oil
1/4 cup raw almonds
2 tablespoons hot pepper garlic sauce, Delallo is a good brand
1 teaspoon grey salt
Fresh ground pepper
Water
Put it all in a food processor and pulse till it is a finely chopped sauce VOILA, PESTO!! We love our Farm!
You will love my beet green and radish top pesto!
Serve over angel hair or any pasta of your choice
Also wonderful over gnocchi, rice or ravioli
As a condiment for meat or fish, just fabulous
Make a lot and jar it, keeps refrigerated very well!
