Cod, Clams and Calamari

Cod, Clams and Calamari A saffron infused tomato seafood broth full of cod fish, clams or mussels and calamari served over linguine! It just doesn’t get any better than this!
This simple seafood dish is so simple to prepare, full of flavor and nutrition and is so satisfying!
1/4 cup extra virgin olive oil
4-5 cloves garlic, peeled and sliced
1&1/2 teaspoons saffron threads
2 organic golden potatoes, sliced
2 organic tomatoes, chopped
1/2 cup wine, red or white
1/2 cup water
1 cup seafood broth
Dash of Aleppo pepper flakes
Salt and pepper to taste
4 cod fillets
1 dozen clams or mussels
1 cup calamari rings
1 bunch flat leaf parsley, roughly chopped
1 lb. Linguine, cooked al dente in well salted water
In a large skillet heat olive oil on medium high
Add garlic and brown
Add saffron,potato,tomato,wine and water
Add peppers and salt
Add the seafood and the seafood broth
Simmer until the the fish is cooked through but still firm and clam or mussel shells have opened
Add parsley and serve over cooked linguine immediately
Serve with a dry white or red wine, rosé is also lovely
