A Christmas Leg of Lamb!!

A simply prepared leg of lamb takes no time at all but makes a magnificent presentation at table. A few simple herbs & lemon create an overwhelming flavor sensation!

This is a perfect roast for any Holiday! What I am serving for Christmas!!

 

 

 

Roast Leg of Lamb

Leg of lamb, 5-6 lbs1 bulb of garlic, cloves peeled and sliced1 bunch of fresh oregano, chopped

2 tbls of dried oregano

2 tbls kosher salt

fresh ground pepper to taste

Juice of 3 lemons

1/2 cup extra virgin olive oil

Preheat oven to 425 degrees farenheit

Coat the lamb with olive oil and lemon juice

With a sharp knife make small slits in the lamb and insert garlic slices throughout the lamb, rub remainder of the garlic all over the lamb along with the dried oregano

salt and pepper,sprinkle fresh oregano all over the lamb

rest the lamb at room temperature for an hour

Place lamb in a roasting pan , add extra olive oil and lemon if needed.

Roast lamb for 45 minutes at 425 degrees, then reduce the oven temperature to 350 degrees and continue to roast the lamb to desired doneness, 145 degrees on a meat thermometer for rare and 150-160 degrees for medium done!

Remove lamb from oven and let rest for 30 minutes

In the meantime oven roasted potatoes can easily be prepared in the same oven. Quarter potatoes, dress with olive oil, salt and pepper and a bit of dried dill. Roast in a shallow baking dish along side of the lamb or on the rack above!

The lamb can be served with potatoes and a fresh green salad!

A side of taboulie or couscous would be sensational!

Don’t forget freshly sliced tomatoes and cucumbers with a bit of salt!

In the spring serve the lamb with orzo mixed with with roasted grape tomatoes and asparagus, laced with olive oil and lemon juice and salt and pepper!

This is a fabulous entrée that you will serve again and again. So easy and so simple and so enjoyable!        Try a Pinot Noir!
